This mayo-free and egg-free potato salad recipe is a lighter alternative to a traditional creamy potato salad, and quick and easy potato salad recipe. It relies on basic herbs for its flavor, making this herbed potato salad perfect for summer cookouts when you don’t want something as heavy.

Instructions

Boil water in a large pot

Use a sharp knife to slice potatoes into 2-inch pieces

Add to a large pot of boiling water and boil for 10-15 minutes or until just fork tender (don’t overcook)

Pour into a strainer and drain, and allow to dry, then transfer to a large bowl

Add all ingredients except for dill and parsley into a small bowl and whisk together, making sure the honey is thoroughly combined

Pour dressing into the bowl with potatoes and gently toss together until potatoes are fully coated. Don’t overmix or the potatoes will become mushy.

Sprinkle dill and chives over the top of the potatoes

Tips

Overcooking Potatoes – Watch the potatoes and take them off the heat when they start to tender. Overcooking will cause them to be mushy when the dressing is added.

Gently Mix – Stir the dressing gently into the potatoes. If you stir too hard, the potatoes will start to become mushy.

How long does it take to soak potatoes in water to clean them?

To properly clean potatoes, soak them in water for 15 to 30 minutes. This allows dirt and grime to loosen, making it easier to remove them with a vegetable brush. Soaking for longer, even overnight, can be beneficial if you’re trying to reduce starch.

Kept in a bowl tightly covered in plastic wrap or tin foil or an airtight container, this potato salad keeps in the fridge for 2-3 days.
