Super Simple Cherry Brownie Truffles

Soft and chewy brownie bites are stuffed with a Maraschino cherry and covered in chocolate to create the sweetest Valentine’s Day treat. These Super Simple Cherry Brownie Truffles are so easy to prepare, but each adorable bite-sized truffle delivers decadent chocolate and cherry flavors perfect for a Valentine’s Day treat.

Semi-homemade or homemade. You Decide.

This Super Simple Cherry Brownie Truffles recipe is semi-homemade. I use a box mix of brownies and add an extra egg yolk to give the brownies an extra ooey and gooey consistency. A Maraschino cherry in the center gives each truffle a festive Valentine’s Day feel. I roll the brownie balls in semi-sweet chocolate to transform them from brownie bites to adorable bite-sized truffles.

If you’d prefer to skip the box mix and try a homemade version of these truffles, I recommended using the Best Ooey Gooey Brownies recipe. They have a thick, rich, gooey center, and a heavy dense texture. They’re the perfect combination of brownies and fudge. The ooey gooey center keeps the Maraschino cherry in place and is the perfect compliment to the chocolate candy shell.

DIY Double Boiler

There’s no need to purchase a double boiler device as the DIY version works just fine! A double boiler is used for heat-sensitive ingredients like chocolate. You’ll simply heat a few inches of water in a pan. There’s no need to bring the water to a boil, but you do want to make sure it’s hot. Place a heat resistant glass or metal bowl into the pan with the water and place your chocolate in the bowl and stir while the chocolate melts.

Toppings transform these chocolate covered cherry brownie truffles into a festive Valentine’s Day treat. Pick your favorite or try them all!

  • Festive Valentine’s Day sprinkles
  • Crushed Almonds
  • Andes Mint Jubilee Cherry candies. Instead of the traditional Andes mint center, they are packed with real cherry bits. I like to rough chop them and sprinkle them on top. The center of the mint adds a festive red color with the added perk of extra cherry flavor!

What’s in Super Simple Cherry Brownie Truffles

  • 15 oz brownie mix box
  • Ingredients listed on the back of the brownie mix. Plus, one additional egg (yolk only), and instead of water, replace with Maraschino Cherry liquid from the jar.
  • 20-25 Maraschino Cherries, drained and patted dry with a paper towel
  • Semi sweet chocolate chips, 12 oz
  • Sprinkles

How to make Super Simple Cherry Brownie truffles

  • Prepare the boxed brownie mix according to the directions on the package. Add one additional egg (yolk only) along with the other eggs and replace the water with the liquid in the Maraschino cherry jar.
  • Once the brownies have been baked, allow them to cool for 15 minutes.
  • Scoop about 2 teaspoons of the chocolate brownies out of the baking dish using a spoon. Wrap a Maraschino cherry in the 2 teaspoons of brownie until it’s completely covered and set it aside.
  • Cover a large baking sheet with parchment paper.
  • Once the brownie bites with a cherry center are assembled, prepare your double boiler by placing a heat resistant glass or metal bowl into a pan with about one inch of water. Heat the water on medium-low heat. Place your chocolate in the bowl and stir while the chocolate melts. Make sure the water in the pan does not splash into the bowl with the chocolate.
  • Drop a brownie bite into the melted chocolate and roll it around until it’s covered in chocolate. Remove it with a fork and place it on the parchment paper. Add sprinkle topping before the chocolate dries. Repeat for each brownie bite.
  • Refrigerate for a minimum of 2 hours before serving.
