This creamy Summer cucumber salad is the perfect Summer side. It’s a lighter alternative to heavier pasta and potato salads. The light, creamy dressing has a sweet and savory flavor that pairs perfectly with the refreshing crisp of fresh Summer cucumbers. This recipe comes together in just about 10 minutes and uses only six ingredients (aside from salt and pepper) and it’s naturally gluten free, so it’s one of my favorite veggies to whip up at the end of a Summer day or to take to a weekend BBQ potluck or picnic.
Mayo jar cucumber salad
A mayonnaise jar cucumber salad is a cucumber salad created by filling an almost-empty jar of mayo with cucumbers and a few other ingredients. Once all of the ingredients have been packed into the jar, you give it a good shake and there you have it…a Summer side made with the mayonnaise that would have been thrown out…and one less bowl to clean. It’s a great way to make use of those hard-to-reach last couple of tablespoons of mayo.
While I’ve never been able to stuff all of the ingredients in this Summer cucumber salad into the mayo jar, I do love mixing my sauce in the jar. Because you’re using the last bit of mayo which is impossible to measure, be prepared to add the ingredients little by little, pop the top on the jar and shake, give it a taste and add more as needed. Repeat until the sauce is creamy, slightly tangy, slightly sweet and delicious!
The sweet taste of English cucumbers makes them perfect for Summer cucumber salad
While any type of grocery store-bought or garden grown cucumbers will work in this creamy cucumber salad recipe, I prefer English cucumbers. The taste is slightly sweeter than other varieties you’ll find at the grocery store. They’re considered seedless so there’s no need to remove seeds and the skin is thin and it isn’t waxed. They’re usually wrapped in plastic wrap so I don’t even bother peeling them. No need to remove seeds or peel? Welp…English it is!
Just like mama used to make…sort of
This creamy Summer cucumber salad is my mom’s recipe. When I was kid, she used cucumbers grown in our garden and this side was on a regular rotation paired with steak, burgers or grilled chicken. I’ve lightened up the original version of the cucumber salad that my Mom used to make by reducing the amount of sauce. If you prefer a creamier cucumber salad, simply double the sauce portion of the recipe (the mayonnaise through the black pepper).

Creamy Cucumber Salad
Ingredients
- 2 cucumbers
- ¼ cup minced onions For a pop of color, use a red onion.
- ½ cup mayonnaise
- ½ tablespoon sugar
- 1 tablespoon apple cider vinegar
- 2 tablespoons milk Any variety – cow or plant based
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 1 tablespoon fresh parsley or mint Finely chopped (optional)
Instructions
- Peel and slice the cucumbers into thin slices and add them to a large bowl.
- Combine the mayonnaise, onion, apple cider vinegar, sugar, milk, salt and pepper in a bowl and use a whisk to mix thoroughly.
- Pour sauce over the cucumbers and mix well.
- Refrigerate for 30 minutes before serving.
- Sprinkle the top with the fresh dill or parsley (optional).
