Hot Spinach & Artichoke Spread

Fresh spinach and marinated artichokes are mixed with shredded Parmesan cheese, cream cheese and garlic to create a savory, extra creamy spread perfect for fresh, crusty sourdough bread. This decadent hot spinach & artichoke spread is served hot-out-of-the-oven and the flavors are so rich and satisfying….it’s the perfect crowd pleaser for the cooler months ahead.

Serve hot spinach & artichoke spread as a pull-apart bread

Some people with non-celiac gluten sensitivity can actually tolerate sourdough because the extended fermentation process uses bacteria and wild yeast to break down gluten proteins. If you fall into that category, give this variation a try!

To create a hot spinach & artichoke pull-apart bread, you’ll need a 16-ounce round loaf of sourdough bread.

Step 1: Use a sharp knife to slice the bread in one direction. Slices should be about 1 inch apart. Slice bread in the opposite direction to create squares. Do not slice all the way through the bread.

Step 2: Gently pull the bread slices apart and stuff the spinach and artichoke mixture into the slices.

Step: Once you’ve stuffed all of the spread into the slices, sprinkle shredded mozzarella on top and bake at 350 degrees for 15-20 minutes. Turn the heat up to 400 degrees and bake for another 4-5 minutes or until the cheese on top is golden brown.

This hot spinach & artichoke spread can be served as a pull-apart bread.

Variations of hot spinach & artichoke spread

  • Gluten free – This spread is already gluten free so to serve it to gluten free guests, simply swap out the sourdough for gluten free alternatives. Some people with gluten sensitivity can actually tolerate sourdough
    • Trader Joe’s has a gluten free baguette that is delicious.
    • Gluten free, sturdy crackers like Simple Mills Almond Flour Crackers or Mary’s Gone Crackers. Any gluten-free cracker will do the trick as long as it’s sturdy to hold up to the heavy spread.
    • Serve with carrot sticks and/or celery sticks and serve as a hot spinach artichoke dip.
  • Seafood variation – Add 1 Β½ cups chopped, cooked shrimp instead of the spinach.
  • Meat-lovers – Add a cup of cooked chopped or shredded chicken along with the spinach and artichoke hearts.
This hot spinach and artichoke spread is delicious on crusty sourdough bread.

Ingredients
  

  • 8 ounces cream cheese softened
  • ΒΎ cup mayonnaise
  • 1 ΒΌ cup shredded Parmesan cheese
  • 1 clove minced garlic
  • 1 cup packed fresh spinach stems removed
  • 1 cup rough chopped artichoke hearts marinated in oil I highly recommend Costco's marinated artichoke hearts (in the jar) for this recipe.
  • ΒΌ cup shredded mozzarella cheese to sprinkle on top optional
  • sourdough bread cut into cubes or small slices, for serving To serve this dip GF, substitute the sourdough for gluten free crackers or vegetables like carrot or celery sticks.

Instructions
 

  • Preheat the oven to 350 degrees.
  • Mix the cream cheese and mayonnaise in a large bowl with a whisk or electric mixer until fully combined.
  • Add shredded Parmesan cheese and garlic and mix thoroughly.
  • Fold in the spinach leaves and the artichoke hearts.
  • Scoop the spread into a small baking dish. Sprinkle the shredded mozzarella on top (optional) and bake for 25-30 minutes or until thoroughly heated.
