Simply gather the ingredients, add them to a sauce pan, heat, stir and serve with pieces of crusty bread. In less than 10 minutes you have a crowd pleasing, unforgettable appetizer.
A mini crockpot is perfect for entertaining.
Years ago I purchased a crockpot from Costco that came with a mini 2-quart crockpot that’s been sitting in my cabinet for years gathering dust. Over the holidays I stumbled upon it and decided to give a try for our Christmas eve appetizer spread. Rather than baking this dip in the oven I made it in the slow cooker and set it on warm when it was time to serve. It stayed the perfect temperature for snacking while we had cocktails and leisurely grazed on apps. This 2-quart crockpot is far too small to cook dinners for my family of 5 but it’s perfect for keeping a dip warm for serving. Make sure you purchase one with the “warm” setting. The 1.5-quart model doesn’t include settings but having the option to adjust the temperature is essential.
Gluten free blue cheese fondue dippers
Fondue is typically served with torn crusty sourdough bread or a baguette. Here are a few gluten free dippers that pair well with this dip.
- Tortilla chips
- Potato chips
- Veggies – celery sticks, carrot sticks, bell pepper slices, fennel spears, snap peas, cauliflower pieces
- Fruit – pear slices, apple slices, figs, apricots
- Deli counter roast beef either thick cut (dinner cut) or sliced thin and served on a toothpick. I highly recommend Boar’s Head London Broil Top Round Roast Beef. It’s seasoned perfectly and slow roasted to medium rare.
Gluten Free Blue Cheese Fondue
Ingredients
- 2 cups Mexican style blend shredded cheese. Shredded cheddar will also work.
- ¾ cup milk
- 1 cup crumbled blue cheese
- 4 ounces cream cheese
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 tablespoon corn starch
- 1 tablespoon butter
- ½ cup dry white wine If you love the taste of wine in your fondue, you can increase the amount of wine to 1 cup but you may need to add a little extra corn starch to thicken it up a bit.
- black pepper to taste (optional)
Instructions
- Combine all of the ingredients in a sauce pan.
- Heat the sauce pan on medium-low and whisk until all of the ingredients are melted and combined. If you're using a slow cooker, turn it on "high" and periodically whisk the ingredients until they are melted and combined. Adjust the setting to "warm" while you serve the dip.
- Serve with pieces of gluten free baguette, deli counter roast beef (thick cut or sliced thin and serve on a toothpick), tortilla chips or carrot or celery sticks.
