Summer Fruit Spinach Quinoa Salad

This Summer Fruit Spinach Quinoa Salad is loaded with bright, colorful peaches, cantaloupe, tomatoes, spinach, and veggies. It is served on a bed of quinoa and topped with slivered almonds, fresh mint, and a sweet honey vinaigrette.

My favorite part about summer is all of the fresh fruits and veggies. I love going to a farmer’s market and seeing what I can find, and never go with a recipe in mind, just buy whatever I think looks the best at that time! I wanted to use all of the fresh ingredients I’d brought home, and this salad is the perfect mix of all of the flavors. To give it a little substance and protein, I added some couscous and almonds wha-lah, this Summer Fruit Spinach Couscous Salad was born! It’s now on rotation at my house all summer long.

Loaded With Nutritious Ingredients

Peaches – full of fiber for digestion

Cantaloupe – contains loads of vitamin C

Spinach – a great source of iron

Tomatoes – full of antioxidants and vitamin c

Almonds – full of healthy fats

Quinoa – good source of plant-based protein

Variations for Summer Fruit Quinoa Salad

Kale
Watermelon
Honeydew
Pine nuts
Almonds
Basil

What’s In Summer Fruit Spinach Quinoa Salad

  • Peaches – Fresh summer peaches are so juicy and sweet
  • Cantaloupe – fresh fruit, but not too sweet!
  • Cherry Tomatoes – so sweet and delicious
  • Spinach- I like to use baby spinach
  • Quinoa
  • Fresh Mint chopped
  • Almonds – this uses slivered, but you can use whole
  • DRESSING
  • Olive Oil
  • Honey
  • White Balsamic Vinegar
  • Red onion or shallots (minced)
  • Salt and Pepper (to taste)

Instructions

  • Cook quinoa according to directions
  • Add cooked quinoa to the bottom of a deep salad bowl
  • Stir chopped mint to the quinoa
  • Place layer of spinach over quinoa – you can also chop it up and mix it into the couscous
  • Lay the peaches, cantaloupe, and tomatoes over the top of the spinach and couscous
  • Sprinkle with almonds or mix them in!
  • Dressing
  • Put all of the ingredients in one bowl and whisk together until they are fully blended and serve as a side

Ingredients
  

  • 1 cup sliced Peaches
  • 1 cup Cubed Cantaloupe
  • 1 /2 cup Cherry Tomatoes
  • 1 cup Spinach
  • 4 cups Quinoa
  • Fresh Mint chopped
  • ¼ cup slivered Almonds
  • DRESSING
  • 2 tbsp Olive Oil
  • 1 tbsp Honey
  • 1 tsp White Balsamic Vinegar
  • 2 tbsp shallots minced
  • Salt and Pepper

Instructions
 

  • Cook quinoa according to directions
  • Add cooked quinoa to the bottom of a deep salad bowl

  • Place layer of spinach over quinoa
  • Lay the peaches, cantaloupe and tomatoes over the top of the spinach and couscous
